A delicious and harmonious combination of these varietals with the distinct apricot and white peach Viognier characters adding sophistication to an already enticing crisp citrus flavoured Chardonnay. Well rounded and balanced but retaining bright fruitfulness make this a perfect full flavoured white wine. Like Chardonnay, Viognier has the potential to produce full-bodied wines with a lush, soft character. In contrast to Chardonnay, the Viognier varietal has more natural aromatics that include notes of peach, pears, violets and minerality. However, these aromatic notes can be easily destroyed by too much exposure to oxygen which makes barrel fermentation a winemaking technique that requires a high level of skill. The meticulous winemakers at Chateau Prieure des Mourgues, owners of Domaine des Aspes, are particularly skilled at working with this variety. The potential quality of Viognier is also highly dependent on viticultural practices and climate which is perfect in the southern French vineyards of Domaine des Aspes. This grape variety requires long, warm growing season in order to fully ripen each berry but not a climate that is too hot to where the grape develops high levels of sugars and potential alcohol before its aromatic notes can develop. This wine with its super juicy citrus fruits with a luscious, rounded, peachy notes demonstrate how very well Viognier blends with Chardonnay and especially Chardonnay that is reasonably high in acidity.
