Stunning Wild Fermented Sauvignon Blanc from South Africa
Klein Constantia, one of South Africa’s most historic and famous vineyards, have produced this fantastic wine reflecting the terrior in Constantia while taking inspiration from legendary French producer Pascal Jovilet’s holistic approach to making Sancerre.
Grapes are hand picked from carefully chosen, higher altitude parcels of Sauvignon Blanc. This leads to a high acidity grape, which is able to withstand the simple, natural way in which the wine is produced. Wild fermentation and sulphur free crushing require those specific grapes with higher acidity levels.
The amazing attention to detail and the dedication to the craft results in a light and vibrant wine. The nose is filled with fresh citrus and nettle aromas.
The palate is concentrated and full-bodied with a rich, peppery and mineral mouthfeel. Refreshing and supported by a balanced acidity, the wine concludes with a powerful and flinty finish.
